The Effect of White Bread on Albumin and Serum Ferritin Levels in Breastfeeding Mothers in the Working Area of Sudiang Raya Public Health Center, Makassar

Abstract

Nutritional issues that remain unresolved in toddlers include stunting and undernutrition. The 2018 Basic Health Research (RISKESDAS) reported that the national prevalence of severe malnutrition and undernutrition among toddlers was 17.7%. The present study aims to examine the effect of snakehead fish flour-based white bread fortified with katuk leaves on albumin and serum ferritin levels in breastfeeding mothers. This research employed a quasi-experimental design using a Randomized Pre-Test Post-Test Control Group approach. The results show that the nutritional content of white bread increased in terms of protein, iron, calcium, and vitamin A levels, except for carbohydrates and fats. The moisture content of the white bread met the quality standards set by SNI 8371:2018, which allows a maximum of 40%; however, the ash content did not comply with SNI standards. Analysis results showed a significant difference in serum ferritin levels among breastfeeding mothers after consuming snakehead fish flour (Channa striata)-based white bread substituted with katuk leaves (Sauropus androgynus L.), but no significant difference in albumin levels. The most panelist-accepted formulation of the snakehead fish flour-based white bread with katuk leaf addition was F1 (score 750), which demonstrated increased levels of protein, iron, calcium, and vitamin A, with moisture content meeting SNI quality standards. There is a significant effect of consuming snakehead fish flour-based white bread substituted with katuk leaves on serum ferritin levels in breastfeeding mothers.
