Development of a BuProt Complementary Food Formula to Prevent Stunting

Abstract

Although its frequency has declined, there are still a lot of cases of stunting worldwide, making it a critical public health concern. Preventing stunted child growth during the golden period is crucial. The goal of this study was to determine the nutritional content and panelist acceptance of the color, aroma, texture, and taste of the BuProt Formula. This study has an experimental design. The research location to obtain the right formulation was carried out in the Food Technology Laboratory of the Nutrition Department, Makassar Health Polytechnic. Meanwhile, the organoleptic test was carried out at the Bougenville Posyandu, Lanraki, Paccerakkang Health Center area, Makassar City of Indonesia. The 50 panel respondents consisted of; Mothers of toddlers (n = 34 people), Nutrition workers and staff of Paccerakkang Health Center (n = 5 people), Posyandu cadres (n = 4 people) and students of the Nutrition Department of the Makassar Ministry of Health Polytechnic (n = 7 people). Using a hedonic test scale with four options very dislike, dislike, neutral, like, and very like the acceptability of the product was evaluated. The nutritional content of the product was assessed using the Indonesian food composition table (TKPI), 2020. Hedonic test data were analyzed using the Univariate test. As a result, the organoleptic test revealed that 56% of participants preferred the BuProt Formula in terms of taste. From the aspect of color 68%, aroma 66%, and texture 62%. The nutritional value of BuProt Formula Products in 100 g is as follows: energy (121.5 kcal), protein (6.7 g), fat (5.8 g), carbohydrates (11.5 mg), vitamins C (18.8), B3 (0.62 mg), and A (12.47 mg), minerals Fe (1,16 mg) dan Calcium (51,3 mg). The new invention in the development of a complementary food formula for toddlers in the form of BuProt has good potential to be used as one of the food formulas with high nutritional value and good quality to prevent Stunting. Overall, the BuProt Formula obtained the highest score from the panelists, with good ratings for taste, color, aroma, and texture.
